India's village foods

হাতে সময় কম,মাছ ভাজার ঝামেলা ছাড়াই মাত্র ৫ মিনিটে বানিয়ে ফেলুন মাছ মশালা, বাচ্চা থেকে বুড়ো সবাই আঙুল চাটবে

 বাঙালির পাতে মাছ না থাকলে খাওয়া টাই অসম্পূর্ণ থেকে যায়। কিন্তু সংসার ও অফিসের সাথে তাল মিলিয়ে রান্না করাটাই একটা বড়ো ঝক্কি।তাতে কি কথাতেই তো আছে যে রাঁধে সে চুলও বাঁধে আর তাই আজকে আপনাদের জন্য এমন একটি রেসিপি শেয়ার করব যাতে রান্না টা হয় সেরা আর স্বাদ হয় অসাধারণ। উপকরণ  মাছের পিস নুন স্বাদ মতো  হলুদ গুড়া  লঙ্কা গুঁড়ো  জিরা গুঁড়া আধা চামচ  ধনে গুঁড়া আধা চামচ  কাঁচা লঙ্কা চেরা ২-৩ টা  পেঁয়াজ কুচি ১ টা বড়ো  রসুন বাটা ১ চামচ  আদা বাটা ১ চামচ  ১ টা মাঝারি সাইজের টমেটো কুচি  আধা কাপ জল পদ্ধতি  মাছ ভালো করে ধুয়ে জল ঝরিয়ে নিন। এখন একটা পাত্রে মাছের সাথে নুন হলুদ ও অন্যান্য সমস্ত উপকরণ মিশিয়ে তাতে সামান্য একটু জল দিয়ে ঢাকা দিয়ে গ্যাস এ বসিয়ে দিন।ফুটে উঠলে আঁচ কমিয়ে চেরা লঙ্কা উপর থেকে ছড়িয়ে দিন। আরো ৫ মিনিট রেখে গ্যাস অফ করুন আর গরম ভাতের সাথে পরিবেশন করুন মজাদার মাছ মশালা ।

Chicken biriyani

Ingredients : (For four persons) Basmati rice 350gm soak in water for 1hour Chicken leg piece 500gm Curd 100gm Onion paste (1 big size)  Chopped onion (1 big size)  for beresta  One tablespoon garlic paste  One tablespoon ginger paste Red chilli powder according to taste  One teaspoon turmeric powder  One tablespoon coriander powder  Gulab jal  Kewra jal Meetha atar  Biriyani masala Cardamom, star Anes, bay leaves  Mint leaves optional Two big size half boiled C potato cut in to four pieces  Three boiled egg Others : Ghee  Warm milk  Saffron  Food colour optional Process: In a  bowl take the chicken leg piece & add curd, onion paste, ginger garlic paste, red chilli powder, coriander powder, salt, turmeric powder, two tablespoons biriyani masala, one teaspoon ghee & marinated for 30 minutes.  Now boil water in a pan or kadai add some salt, bay leaves, cardamom, star masala & one teaspoon ghee. Machhe vate bangali :

Today I share some important food and rituals related to it.  India has a lots of religion & there food habits are different. I am bangali & belongs  from west Bengal. Here is a line very popular - "machhe vate bangali " Or a ward  Rice is the main food in west Bengal & without fish their lunch is incomplete. Fish/machh plays a very important role in our kitchen. It completes our lunch. From breakfast to lunch to dinner & also snacks everywhere fish is the king. There is a thousand items prepared from fish🐠  As example there is  several type of fish fry available in India . There is various types of fish from small to big available in river & villager caught them using normal net. Even womens are caught them easily.  Most interesting fact that we bangalies thought fish is a good sign in marriage  and we strictly follow  & respect this rituals when laws family brings a big fish for bride. We think Big fish big happiness....

Roasted corn

Today I share something about me. I am  on rest from long time after my fracture. That's time I thought why lost the time to rest & I spread some corn seeds in our garden.    After 4-5 days I am shocked to see that they are sprouted & two soft green leaves are growing up.    Naturally without any care they are growing & after 3months first corn seen.  I was very excited to eat that corn.  Today I roasted that corn which is very yummy. In my village there is available corn just rs10 only but it was my own garden which pleased me so much.  Roasted corn is a simple process to prepare. Just roast the whole corn & put some salt and lemon juice. It is ready to serve & also very delicious. 

A morning in heaven :

Good morning. What are you thinking  ? Is it possible to spend a morning of heaven in this age?   Strange as it may sound, but it's true. Well, have you ever woken up very early in the morning and sipped your tea?  If your answer is know then try once. When the sky barely started to red then you sit on your balcony & lean on the easy chair enjoying that scene and a cup of hot tea in your hands .......... Far away from all thinks of the world and you choose that time only for yourself   Imagine for a second... It is good to think so...          That's why I said that morning in heaven. 

Lovely Banana :

There is anyone who dislikes banana? Banana is that one fruit which takes anyone from babies to oldage.    In weaning periods all mothers first choice for their baby is banana & doctor also recommend it because it is healthy rich in calcium, easy to swallow, easily digestible &also filled stomach &give huge energy.  I n my village, villagers cultivate banana, here is available many types of banana &also they are popular according to their names .   According to the farmer it is  very profitable & per acre profit average one to two lakh /year.   Benefits that banana tree cultivated just one/three year & it's give fruits for three years.    Nearly my village there is a banana farm where every farmer join with their fruits at every Tuesday & Saturday. From their separate good qualities banana & export them in another states & country.

Good morning. Today I discuss with you  about such a thing that you can't imagine. Do you eat jackfruit seeds? If you don't I tell you it's benefits.  Jackfruit seeds:   Firstly it is very tasty and in my village there are very popular because it is a no cost vegetables.  It's benefits are: It is free with fruits  It is a good source of carbohydrates         It's carry a huge amount of calcium  It is very healthy. It is helpful in prevention of malnutrition.  Recipes in my home: My home there is several types of recipes prepared with this. Sometime it roasted and put some oil & salt mixed well & serve with rice Prepare with some vegetables like snakegourd, auram etc Some time fish added with it &  It also use to prepare sweet dishes like halwa. So after that don't throw it away ,prepare a delicious meal  with it & tell me which one you like most. 

Kolkata famous mutton biriyani

Kolkata famous mutton biriyani :              Good morning hope you're healthy. Today I share home made mutton biriyani made by sister.  Recipes               No today I don't share the process biriyani because now a days biriyani is a common cuisine among Indians as well as foreigners also cause Indians are  ev erywhere.  About my recipes:               Normally biriyani is famous for its authentic look, texture and test but when it is made at its taste mind blowing. And my Britani is awesome. Now you have a look  Wow..... It's colour and texture... What do you think?    Today I use 750gm basmati rice & 1 kg mutton, 4piece egg & 2big size potato.  Also use Everest Biriyani masala, gulab jal, kewra jal & meetha atar.. Use aluminum handi to make it perfect.  Finally served with raita & salad. 

Indian popular snacks:

Today I discuss about a popular snacks in India and because I belong from a so called village & market is far away from home we prepare these at home.  Somosa/singara: Somosa is a popular snacks in all over India. It is a very tasty snacks & mostly serve to the guest. It is triangle in shape and staffed with potato curry and some time chicken and other vegetables also used for staffing. A Home made somosa: This is my home made somosa. Shape is perfect. Size is little bit smaller than market but its depends on shopkeeper. Here I use chutney to serve.  Chutney : Today I use pudina chutney and add some curd  to make it tasteful.

Hello... Good morning. At first thanks for watching my blogs. Today I share a village food which called chhana masala.       My mother-in-law prepared it in unique style & taste is always best than before. Today I ask her about recipe, she smiles & Share her technique with me which is so simple. Now I want to share it with you in her language.  The ingredients I used for it: Chana soaked from night One big onion Green chili  Tomato  One table spoon oil Salt Cumin powder and black pepper powder Heat the oil in a pan & add chopped onion & tomatoes,cook for 2mins then add cumin powder, salt according to taste, and  add chana which is keeping aside after draining the water. Mixed well and lastly put some black pepper powder & you may add lemon juice if you want.  It is ready. If    you like it please follow me to know about village food in India.   

Kancha folar

Today I share popular Bengali dish "jamai sashthi special kancha folar".kancha folar is not a fruit it's a compliment of several food.... Like... Poha, mango, banana, rosogolla(a type of sweet), curd & salt.         In jamai sasthi occasion here we don't cook any food and not take any cooked food. So we all take kancha folar in this day after puja.          We believe that 'maa saahthi' keeps our child safe and for that reason we pray this day.

Good morning. Today I say about chicken cuisine. If you like chicken then you are always welcome, because it is very healthy ....actually any products of meat are not allowed for cardiac patient but only poultry are the things that the doctor suggested to take because of its health benefits.  It is known that regular taking chicken in meal help to lose weight even chicken breasts are suppress hemocystiene amino acids in case of cardiac problem. It is a lean meat and various cuisine is available  in the world. Where we most bangalies like some spicy & another non spicy simple soup of it also famous. In restaurant their is thousand types of variety available. Today I prepare masala chicken & serve it with rice. So if you like chicken take it easily without any  fear. OK take care. 

Luchi tarkari

Luchi tarkari is a popular dish in west Bengal. It is a traditional dish also. Most of bangalies love and prefer this in their breakfast.   Damodor Seth also likes Luchi.     Today my breakfast is luchi,chholar dal & alu potol er tarkari..... Today I not use  English term in my food so that you see the image & understand what I am trying to tell you. We bangalies are soooo... Foody that we love to take luchi anywhere any days like any occasion, traveling, breakfast, puja, for guest etc.... 

khichdi

It is a healthy tasty and easily and food and important part of its that anybody can take it from children's to aged, healthy to patient and always it gives nutrition. It's making process so easy and time saving .     In taste various flavor available and foodies enjoy several taste according to their choice. I love mixed veg khichdi & whether others like.... Plain dal rice khichdi or vegetable, egg, chicken, mutton & also soya khichdi. Today I take some snacks to make it more delicious...... So do you like khichdi or which flavour? Comment me..... 

GHUGNI

Good morning. Today I am very busy but as usual I share my morning breakfast with you. Today's menu "ghugni". It's a spicy delicious dish & serve with roti, bread, muri & some time  we eat it as a just fast food. I love it very much even when I going to a fair ghugni & fuchka is my first choice. I take ghugni in my breakfast almost two days/week. If you want how I made this  comment me. OK bye

Nababi mixed chhat

Good morning to all.... Guess what? Today I share with you neither my breakfast nor my lunch or dinner, I share a new chatpata nababi chaat for tiffin time or time pass wala chhat. So... For this nababi chaat those ingredients I used.. Two boiled corn Two boiled potatoes cut in to small pieces One onion finelly chopped Two green chili finely chopped One tomato finely chopped Salt Black pepper powder Chaat masala... Optional Mixed all ingredients well & lastly add some mint leaves or pudina & lemon juice. Great this healthy and tasty nababi chaat ready to serve.

Bread toast

Hello guys do you like bread toast? Today I want to share a thing that I don't like bread but when mom makes it with egg then I'll finish it smoothly. It looks some odd but I take a little potato fries with it  because I love potatoes or any recipes made from potatoes.  Today is  again rainy day & I don't get out from home... I play with my son Aditya....... a one year old boy....  I don't attend my duty because I have a fracture in my right leg.so all time my duty is playing with my  baby... Taste various foods and complete rest.  Ha ha ha this lock down period I think I  sincerely obey the lock down rules..... OK be safe.. Stay home stay healthy. 

Puffed rice and nun chhola :

Good morning to all of you .today morning after drinking a cup of tea I visited our garden & collect  some fruits and vegetables ,like.... Lemon, jackfruit, corn, mango, parwal, snakegourd etc... So I get late to make my breakfast.... But don't worry today I complete  my breakfast with puffed rice and nun chhola. You are confused what is nun chhola? OK I'll describe.... Soked chhana with salt... & cooked in frying pan it's called nun chhola in Bengali. It is short time breakfast healthy and easily digestible and tasty also. You can make it spicy to add some chopped onions,garlic,ginger & green chili and black salt. I like it very much,i Hope you too. OK have a good day.  

todays lunch

Todays menu for my lunch is..... Rice, prawn posta, chicken curry, parwal fry, potato fries  & leafs. This is originally my Bengali dishes, which is best. I likes one sweet in the last but today sweet is not available in my house. So I take a piece of mango to complete my lunch. Not only me I think every Bengali or Indian enjoy Sunday as holiday come food day. What are you thinking? Please comment me OK..... Now I take rest as a pure Bengali. OK bye..... 

My evening snacks fuchka:

Hello friends today I have to go to share with you my favorite evening snacks which called in my language is fuchka. I love it very much but this lock down period go out home is not safe so today I prepared it home. You think I'm very good cook........ No I learn this process from YouTube. As I prepare it for first time it was very good. Oh sorry I forgot to tell you that it is a crunchy little puri which served with one type of sour water and smashed potatoes. My all families loved it so much & enjoying. I hope you also try this at home. OK then bye... Take care 
Corn chaat: Corn chat is a chatpata or spicy food no no snacks heard better. OK it is a mouth watering snacks prepared from corn & many others spices.  Here I used two grilled corn, onion, green chili, black pepper to taste and salt, mixed well & my chaat ready. To increase the taste I also used lemon juice.  Believe me it is so yummy........  It is healthy though it is hard to digest but it help us to grow our immunity & strength. OK bye have a good day.... Dosa

Today I complete my breakfast with famous south Indian dish dosa,served with peanuts chutney. It is very delicious to me. I was very excited to eat it from tomorrow when it's preparation started . Tomorrow afternoon when my mom mixed soak rice&dal & prepared batter I continuously watched.  After fermentation that batter today ready for dosa..... Ha ha ha I also finish 3piece of dosa & two bowl chutney....       How foody I am.....  Today I started my morning with three drops 'arsenicum album' recommended homeopathy medicine for corona.... & since my taste gone but now after taking dosa I feel relaxed .....ok bye
